Then for lunch, I had a big ole piece of salmon baked with dandelion greens, Thai basil, and I laid a slice of lemon on top just for flavor. I also had some Hawaiian purple yam. All yummy and well tolerated.
Finally for dinner tonight, I had NY strip, kale, and lotus root.
Preheat the oven to 325f. Peel and slice the lotus root. Toss it with olive oil. and spread in a single layer on a well oiled cookie sheet. Bake for 20 minutes, check and remove any that are crunchy. Put the rest back in the oven -- check every five minutes until they're all done. While they're cooking, season the steaks with sea salt, garlic powder and coconut aminos, brown and put in the oven with the lotus until desired doneness. I used frozen kale, so I just heated it with sea salt, garlic, and a splash of coconut aminos.
