I never got around to breakfast this morning, and just had a sweet potato for lunch.
My allergies are flaring today. My sinuses are clogged and I feel -- not really itchy, but just on the verge of itchy. Kind of . . . raw. I don't know how else to describe it. All my nerve endings just feel raw.
For dinner, I made a stuffed flank steak and salad. Then I sauteed chopped zucchini, shredded carrots, fresh basil and fresh cilantro in a bit of garlic chive spread and olive oil. While that was cooking, I pounded out the steak and spread a thin layer of the garlic chive spread and sprinkled it with sea salt. After the veggies and herbs were cooked down, I spread them on the steak. rolled it up, and secured it with skewers. I browned it in the same skillet, and then popped it in the oven at 395f to finish.
I also roasted a red potato for Mike. I cubed it, tossed it in olive oil, and sprinkled it with sea salt, garlic, and dill and put it in the oven with the steak.
Then I tossed a salad of mixed greens, shredded carrots, cucumber, blueberries, and raisins, topped with a bit of balsamic and olive oil.
Crazy awesome!
