This evening I was so looking forward to some corned beef and cabbage. I put some rutabaga, carrots, cabbage, turkey broth, and corned beef in the pressure cooker. Then I went to double check the ingredients in the spice packet -- that's when I realized that the beef was cured with nitrites and I couldn't eat it. So I went ahead and started the pressure cooker for Mike.
Then I cut up a couple more rutabaga and set them to boil in some turkey broth. I cooked some uncured bacon, and chopped some cabbage. I cooked the cabbage in the bacon grease. While that was cooking, I put some carrots in a sauce pan with just a little bit of turkey broth and set it to simmer. When the rutabaga was tender, I mashed it with a bit of the broth and added some of the garlic chive spread to make it creamy. I mixed it into the sauteed cabbage and let it simmer a bit longer.
Everything was actually ready all at the same time (except the bacon). Mike loved his and mine was delish!
Happy St. Paddy's Day!
