Day Seventy-three

Today I had leftover sauteed sweet potato from yesterday for breakfast instead of my usual blueberry smoothie. For lunch, I had some of the stir fry with brown, red, and black rice that I had frozen from dinner on Saturday.

For dinner, I had intended to make stuffed zucchini, but I kept wanting a burger instead. So that's what I made (there are some perks to being a grown up).

First I sliced the zucchini up to make zucchini fries. I tossed them in oil and spread them in a baking dish, sprinkling them with sea salt and granulated garlic. I put them in the oven at 425f.

While that was cooking, I put carrot, basil, and cilantro into the electric chopper and minced it finely. I stirred that into some grass fed ground beef with some granulated garlic and sea salt. Then I formed 6 thin patties, making an indentation in 3 of them. I put a little dollop of the garlic chive spread in the indentation and then covered it with another patty -- so that I had three thick patties with a bit of the garlic chive spread in the middle. I fried them in the iron skillet. Then I served it on a bed of mixed greens and drizzled it with a bit of balsamic.

The zucchini fries were mushy, I think maybe there was too much oil. But the flavor was good and the burger was delish!
