For lunch, I baked a couple of chicken strips and sliced up a sweet potato to go with it. I sprinkled them both with salt and dill. I also had some figs in the freezer and ate two of those.
By 4:30, I could barely keep my eyes open. Not sure what that was about, but I was exhausted.
Then it was another late evening. It got to be 8:00 and I hadn't made it home dinner yet. I couldn't face another lettuce wrap or plain burger, so we went to Noodles & Company. I got the Pad Thai made with rice noodles, carrots, cabbage, egg, bean sprouts, fish sauce, and peanuts. It also came with a slice of lime to squeeze, but I figured with the fish sauce and peanuts, the lime would be pushing it. I got the smallest order even though I was starving, because I wanted to be frugal. It still filled me up though -- probably because of all the rice in the rice noodles. But so far so good. I'm still exhausted, but that was happening before dinner.
I'm a bit frustrated at eating out three times this week. It is definitely not a pattern I want to fall back into. It's been difficult because we only have one car, and by the time I get off work and go pick up Mike, if we have any errands to run we either have to eat on the go or not have dinner til 9:30 at night. However, Mike is getting a car in the next couple of weeks, so hopefully I can get back to cooking healthy real food again. I look forward to it!
