Day Ninety-seven

Had an apple for breakfast. Left over chicken breast and mashed sweet potato for lunch.

I was starving between jobs, so I stopped at Sprouts and grabbed some organic carrots and tahini to snack on. I also got a call from my doctor saying my vitamin D is low (22) and my oxalates are high. So I grabbed a bottle of vitamin D while I was at the store, and I need to start spending time in my garden to soak up the good yellow energy. I'm also going to have to cut back on the blueberries and sweet potatoes I guess.

For dinner, I cut the rest of the chicken off the carcass from last night and made some chicken salad. I added carrot, celery, fresh basil, fresh cilantro, some rosemary, garlic, and sea salt. I used just a touch of brown mustard, and I used mayo from Trader Joe's. It's made with canola, which isn't the best, but at least it's not soy. I put the chicken salad over a bed of mixed greens.

I also tossed the chicken carcass in a pot of water to boil and make some homemade chicken broth for later.
